Coconut Cauliflower Soup

Made Tom Yam kind of soup with homemade coconut milk. That gave me idea that cauliflower in coconut taste very good.

So ppl doing keto can make keto soup with cauliflower. I made paste first with lemon grass. Garlic , ginger , little red onion , cilantro stalks and red chili. To give it nice red color I added Korean chili powder .

Fry paste in coconut oil for a minute and then add water. Let it boil , add salt.

Add fresh cauliflower florets , mushroom , broccoli, squash whatever veggies you like and let veggies cook. If you can find long mushrooms, they r good for soup.

Add coconut milk , simmer for few minutes.

I added bean sprouts and noodles to it .

Garnish with cilantro , green onion. Squeeze some lemon /lime juice.

Just play with what you have and coconut milk make soup tasty.

Arugula Walnut Pesto

Fresh nice looking green arugula is hard to find and I came across a package so now I have to use it . Made pesto and turned out good.

In a food processor , process arugula with garlic ,olive oil, little bit lemon juice . Yes salt too.

Pound lightly roasted walnut or roll it using rolling pin and make powder. You can use almond , cashew , pine nut too.

Mix walnut powder with arugula and add some Parmesan cheese. That’s it.

If you like smooth pesto, blend more.

Pesto is just like our Indian chutney.

Use pesto in sandwich as a spread . Use keto bread if you are on keto. I think this pesto is keto.

Cauliflower Rice Poha

Cauliflower rice ideas seems to be in demand . Cauliflower rice Paratha idea got some likes so thought I will share another idea.

Poha is flattened rice which we use with potatoes to make this dish .

Replaced potato with tender cauliflower stalk . You can use broccoli stalk too. Use what you have.

Recipe is quick and simple. Let me try to write down .

Heat oil and crackle some mustard seeds and cumin seeds. You can use either one if you don’t have both.

Add raw peanuts and try for a minute or 2 so that they turn crunchy.

Now add chopped green chili and chopped cauliflower stalk. Add salt and pinch of turmeric powder and cook covered . Add water if needed. Add curry leaves if you have it . You can also add some chopped onion here.

Add cauliflower rice. Throw some cashews in at this point . Adjust salt and turmeric powder and cook cauliflower. Add water if needed just little .

Add just a little sugar , squeeze fresh lemon juice .

Garnish with cilantro. You can sprinkle some pomegranate seeds which will be so good . Also you can sprinkle some grated coconut.

Voila tasty breakfast, lunch ready.

Almond & coconut flour gravy

Coconut , almonds and other nuts are used in curries so why not use flours if you have it ? Wonder it can be called keto.

First cooked cauliflower in tomato I puréed with some ginger , garlic . If course using Indian seasoning and spices .

Take a spoonful of almond flour and a spoonful of coconut flour and add water to it.

Once cauliflower is cooked , add flour mixture and bring it to 1 boil. Coconut flour absorbs water so it will thicken curry.

Garnish with cilantro.

You can use flour mixed with water to thicken your Chinese curry or any curry.

Cauliflower Rice Paratha

Cauliflower rice has become very popular now a days and cauliflower Paratha has been loved by Indians for so long. It involves shredding cauliflower but now this cauliflower rice is perfect for Paratha too. When you don’t have cauliflower or less time or let’s be honest lazy like me then this is very handy.

If you never heard of cauliflower Paratha but would like to use cauliflower rice, have something for you too.

Cook cauliflower rice according to pkg instructions and make sure it’s dry and no water left .

Add spices like turmeric, chilli , roasted cumin powder , ginger garlic powder or curry powder and salt . You can add some chopped cilantro. Gives a nice flavor.

Take tortillas you like , wheat or white , Keto whatever . Make like quesadilla filling this spicy cauliflower mixture . You can add cheese too if you like . Use ghee if you have for paratha flavor or butter. Be creative.

We eat with plain yogurt on the side.
