Tofu Tikka

Paneer Tikka is a popular appetizer in Indian restaurant but you can use Tofu too . Use extra firm tofu. I had firm tofu and so you can see how it disintegrated.

Basically vegetables are marinated in yogurt sauce. We add some roasted chickpea flour but if you use greek yogurt it’s thick enough . Or you can use any flour you generally use to thicken your soup or sauce here.

Now add spices like red pepper, turmeric , cumin powder etc . Your choice, likes snd creativity into plain yogurt. If you have kasoori methi and mustard oil add that for Indian flavor. Or little olive is good too. We are flexible , right ?

Marinate vegetables like colored pepper , tofu, onion , mushrooms.

Put it on skewers and bake in oven for 30 -40 minutes turning them around few times in between . You can pour little butter when you turn it around .

This is no way authentic tikka recipe that you find in restaurants but at home for fun, healthy meal.

With little salad on side and cilantro chutney makes a good meal.

Appetizer for dinner . Why not ? Our minds are so conditioned that we get stuck on right and wrong and forget to be just happy.

Mini Idlis

Mini idlis are popular from a while and I may be late in the game . Well, found mini Idli stand in Indian grocery store and so finally I tried . Until now I only ate when friends made them.

Mini Idli makes fun appetizer for a party too.

You can have plain with chutney or season it . So many options .

Beetroot Cutlet

Are you trying to eat beetroot but can’t stand color or taste ? Try cutlet.

  • Take boiled 1 beetroot or if it’s raw , shred it . Mix it with 1 or 2 boiled potatoes .
  • Add ginger , garlic , dry spices you like , cilantro, mint leaves whatever you like and what you have .
  • Add some bread crumbs and see if you can make cutlet .
  • Coat with bread crumbs and Shallow fry in coconut oil.
  • You can have it with salad to make a full meal.
  • I started eating beetroot regularly because it helps with hikes.
  • If you are looking for a reason , then it’s very yummy. There’s some research done on it helping lower blood pressure too .
  • If you never had beetroot, start slow. Eat a slice of it.
  • We don’t need so much of everything. Little goes a long way.

Roasted Cauliflower With Hummus

If you never had home roasted cauliflower, try it. It taste so good. Idea for party appetizers which is healthy and tasty. You can make for yourself too for salad or side dish with Indian meal. It taste great without hummus too.

Cauliflower I added little olive oil, sprinkled some kosher salt and chili powder . Roasted in toaster oven at 350F for 30 minutes. I started before meeting and so voila, after meeting I had yummy cauliflower waiting for me .

Reviewing A Decade?

If you look around on social media or anywhere on net , everyone is reviewing a decade and posting pictures to glorify themselves. We all know life is a school and presents challenges, lessons to learn to all of us.

So if you have messed up life or any part of life , it’s ok. We all mess up things , make mistakes . Sit back, breathe , relax and ask God/universe to show you a way. There’s always a way to be happy, at peace. It might not be the way you like but who cares. Whatever works. Most imp is your willingness to make change.

My teacher always says birthday is your new year and not calendar new year. So Don’t let social media deceive you.

Picture is of “Dahi Puri chaat” I made . If you never had Indian chaat, you must try. It has all the flavors. You don’t need to go to India to have a taste of it in today’s world . So try it. If you like it, you can throw a chaat party. You can buy everything at Indian store and ppl will have fun putting it together, trying to put whole “puri” in a mouth.
