Minestrone Soup

Minestrone soup made in Instant pot. Add everything to instant pot when you have 5-10 minutes and then go back to work. Few tips:

  • Freeze some beans when you cook them for other recipes.
  • Use small pasta so it gets cooked in instant pot with everything.
  • I like to add a piece of ginger.
  • Had trader’s joe’s bread to go with soup.
  • Simple , quick meal that you can feed to crowd if you have hungry crowd at home .
  • Nice cold, cloudy day here that called for some hot soup.
  • Now I better I get back to work.

Save The Turkey

During thanksgiving we see sweet potatoes, cranberries, green beans etc everywhere on sale and plenty. Made Black bean sweet potato burrito. Simple and tasty.

Steamed sweet potatoes in insta pot. Sweet potato taste great plain steamed or roasted . There’s absolutely no need to add thousand different things to sweet potato and ruining it.

Keep things simple and thanks your stomach for taking all abuse .

Insta Pot Vegetable Stock

It’s so easy to make stock but super easy in insta pot. 30 minutes on high pressure and let it naturally release. I use onion, carrot, celery, cilantro stems, mushrooms , broccoli stems. Adding a piece of ginger will be good but i forgot.

What to use stock for? You can use to cook rice ,quinoa, millet or in soup. I like to use for soup in winter time and soups are good for work lunch. Easy to eat and carry. You can also use to make roti, paratha dough when you are adding veggies or spices. Am not sure how plain roti dough using stock will turn out. But won’t hurt to try. It will add nutrition.

Insta Pot Veg Biryani

Now a days on social media everything seems to be money oriented. Pay and ppl will advertise products. It’s important to be honest to yourself . Remember you are watching yourself.

So made this biryani in insta pot and if you are a true biryani lover then this is not for you. It’s more like rice with vegetables with biryani masala and it’s quick.

Good part : Rice was cooked perfect. Vegetables retained their shape . And it’s quick.

Bad part: It doesn’t taste like biryani. Doesn’t have crunch of vegetables. And cannot leave house while it’s cooking because I will have to quick release and eat it right away which is a big negative point for me . I like to start insta pot and leave or get busy with other work.

Trick to cook perfect rice , veggies seems to be 5 min at “low pressure” and quick release. Use vegetables that will cook in same time and cut them same size.
