Tofu Tikka

Paneer Tikka is a popular appetizer in Indian restaurant but you can use Tofu too . Use extra firm tofu. I had firm tofu and so you can see how it disintegrated.

Basically vegetables are marinated in yogurt sauce. We add some roasted chickpea flour but if you use greek yogurt it’s thick enough . Or you can use any flour you generally use to thicken your soup or sauce here.

Now add spices like red pepper, turmeric , cumin powder etc . Your choice, likes snd creativity into plain yogurt. If you have kasoori methi and mustard oil add that for Indian flavor. Or little olive is good too. We are flexible , right ?

Marinate vegetables like colored pepper , tofu, onion , mushrooms.

Put it on skewers and bake in oven for 30 -40 minutes turning them around few times in between . You can pour little butter when you turn it around .

This is no way authentic tikka recipe that you find in restaurants but at home for fun, healthy meal.

With little salad on side and cilantro chutney makes a good meal.

Appetizer for dinner . Why not ? Our minds are so conditioned that we get stuck on right and wrong and forget to be just happy.

Dinner Thali

Looks like lot of food , isn’t it ? Some good stuff in it.

Ridge gourd with Lima Beans curry.

Boiled beetroot, avocado both sprinkled with salt and lemon juice .

Beetroot leaves with chickpea flour curry.

Rotli is gujju bread .

Mung Dal With Methi

Mung dal with methi bhaji is a very good combination. You can use spinach leaves also instead but methi bhaji gives this dish unique flavor .

I added pickle masala also known as methya masala to it and that also gives very good taste . Oh and add some chopped onion too.

And made in instant pot. Turned out good.

Since this is dry Shaak , you can spread on bread for sandwich. Add onion , tomato and whatever else you like in your sandwich.

Swiss chard with Eggplant

Swiss chard is so easy to grow. You cut leaves and it keeps growing back. 1st picture is of today’s harvest and 2nd picture is how it turned into dish.

Chard with eggplant is odd combination and you won’t see much but it taste good. I made using Indian spices. You can just make a side dish with it too.

  • Use olive oil and sauté some chopped /crushed garlic.
  • Add chopped eggplant , chard.
  • Use your Indian spices or just add salt.
  • Once cooked add some chopped tomato.
  • Cook tomato for a minute and that’s it.
  • You can also add some cashews for crunch.
  • Takes hardly 5 minutes to cook.
  • Enjoy!

Small Changes

It’s easy to add some small good things in meal. Like little salad on the side with just salt and lemon juice. Add little chopped raw garlic or have cilantro chutney with garlic in it on the side . Garlic is immunity booster . Doesn’t hurt to have little.

Sprinkle some flax meal on your meal. Everyone now a days can use some help with constipation.

When you start making small changes , things build up slowly . Like spending 5 minutes doing something you enjoy other than TV of course . May be just 1 sun salutation before meal. Or play a music instrument or paint or draw for few minutes whatever you like. 5 minutes of meditation or observe your breath for 5 minutes. There’s so much and so many things you can do in 5 minutes.
