Spinach With Sprouted Chana

  
      This is another simple sattvik curry you can make in few mins. You don’t need to spend hrs in kitchen to cook nourishing food. Little planning ahead is all needed.

  • Boil sprouted Chana with a piece of ginger and add some salt half way. Cool until done. You can do this step while working or doing some other work.
  • When time to eat, heat little olive oil. Add mustard seeds, cumin seeds, 1 torn red or green chili.
  • Now add washed spinach leaves. Add boiled Chana without water and adjust salt. Cook only for a minute or 2 until spinach is wilted.
  • Use left over Chana with water in soup or rasam.
  • And yes, don’t forget to serve with fresh lemon. Will help with digestion. 
  • Simple sattvik curry ready !

*sattvik meaning nourishing food which will not agitate body or mind after eating.

Cabbage With Beans

 
     Let’s get back to food and recipes again. Indian cooking uses lot of potatoes but now a days people try to stay away from potatoes for different reasons. Cabbage with potato is a very popular dish but it taste great with beans too and you will have some protein in a dish. Here’s how I made it:

  • Heat oilve oil, add some cumin seeds, 1 torn red or green chili , few curry leaves.
  • Add shredded cabbage, cooked beans and salt.
  • Sauté for 2-3 mins. You don’t want to overlook cabbage and kill all nutrition.
  • It’s summer time and very hot so kept spices to minimum and it tasted good.
  • You can use any beans you like. I added small red chori. Chickpeas go really well too if you are not sure. Be creative and try different beans to come up with new flavor.
  • Reminder – chew your food well. Each bite 32 times until it becomes liquid.

Spinach With Navy Beans

  • Sometimes i wonder if all this time and energy am investing in justlunchideas is worth it and if anyone is learning anything or cares to read. Then every time i realise that this is am doing for myself and not for others. Am enjoying  and learning new things here. So many things i have realised writing here, all the new things i tried so i can share here. Well, list is long… Few weeks back, wanted to make lasagna and searching for basic recipe since it was a long time since i made last time. Then I remembered having recipe my friend contributed here. Voila, i followed post from here and lasagna was a big hit.
  • Back to today’s recipe. It’s pretty simple but is really good so thought won’t hurt to share.
  • Cooked spinach with onion , usual indian spices , tomatoes. Had cooked navy beans to make soup and realised i can throw some in spinach.
  • For ppl don’t have all spices, saute garlic in olive oil. Add some chopped onion, tomatoes and spinach. Cook until spinach wilted. Can add some crushed red pepper too. Add navy beans or chick peas and salt. Try to use fresh ingredients. Fresh spinch i would say must.
  • You can use this in wrap with some cheese. Corn tortilla will go well with this.
  • Or use as a side dish.

Masoor Sprouts Curry

  • Natural healers always recommends sprouts in diet. Dr Andrew Saul is 1 of them.I  read his website few years back and  had tried lot of his recommendations.
  • His website is pretty good.   • Masoor sprouts is another very easy recipe and perfect for busy weeknights if you have sprouts ready.
  • Add chopped onion, ginger-garlic paste, red chili powder, cumin-coriandor powder, turmeric powder, salt and very little oil. Mix everything well and then add water. If you cook in pressure cooker, it needs very little water. Approx. 1/2 cup of water for 3 cups of sprouts. 2 whistles and it’s done.
  • A piece of onion and rotis to go with it.
  • If you are vata ayurveda type, add 1/2 tsp of good oil on it. Yum !
  • Nice rural kinda meal.

Gujarati dinner

  • Typical gujarati dinner is some kinda bean curry what we call kathod rich in protein, rotalo and a piece of raw onion to help digest beans. While growing up, i have seen workers at construction site having same kind of dinner. It was a treat to see those women making rotalas on their hands.
  • In olden times they had figured out all meal combinations and what to eat when. Everyone followed it without questioning. But now us intelligent minds has stopped following all that. There’s no reason to not try all new things but would be  good to keep a healthy balance. Interestingly, olden things that don’t work in today’s world,we still follow it. Isn’t it a  high time we ponder over, experiment before blindly following anything and make our own informed decision?
  • Fresh food is always good and taste great.
  • And Prepared meal should be eaten within 2 hrs.
  • I made split mung dal with ridge gourd and corn flour rotalo. Instead of piece of onion,  just made a little salad with tomato ,onion and pinch of salt.
  • Simple, quick and nutritious dinner in no time.
