Have been decluttering , organizing kitchen lately using you tube videos . This small thing I came up on my own I think.
If you have lot of serving spoons that you use for party , potluck, picnic then get a box from dollar tree and put them all together . Now it will be easy to find and they are not coming in the way everyday .
Have you ever tried parboiled rice? If not, may be give it a try with small pkg. I had bought at Walmart. And it is long grain Parboiled rice. They seem to be better than white rice in some nutrition and tasted good.
Cook it according to pkg. I cooked in instant pot. And had with black eye peas Indian curry and I liked it. It was wholesome combination. You can have it with any beans curry and it will taste good.

Poha is flattened rice which we use with potatoes to make this dish .
Replaced potato with tender cauliflower stalk . You can use broccoli stalk too. Use what you have.
Recipe is quick and simple. Let me try to write down .
Heat oil and crackle some mustard seeds and cumin seeds. You can use either one if you don’t have both.
Add raw peanuts and try for a minute or 2 so that they turn crunchy.
Now add chopped green chili and chopped cauliflower stalk. Add salt and pinch of turmeric powder and cook covered . Add water if needed. Add curry leaves if you have it . You can also add some chopped onion here.
Add cauliflower rice. Throw some cashews in at this point . Adjust salt and turmeric powder and cook cauliflower. Add water if needed just little .
Add just a little sugar , squeeze fresh lemon juice .
Garnish with cilantro. You can sprinkle some pomegranate seeds which will be so good . Also you can sprinkle some grated coconut.
Voila tasty breakfast, lunch ready.

I tried to do a smart thing here and added 1 spoonful of coconut flour and removed 1 spoonful of flour from 1 cup measurement . As I was pouring batter into pan, realizes coconut flour needs more liquid . Crap I thought … then realized I added all this cranberries which will burst and provide some moisture as it bakes.
And bread turned out ok. I already ate 2 pieces hot from oven . Try to add some almond flour instead if you have .
Pan is from dollar tree and I love it’s size . It fits into my toaster oven and so I don’t need to turn on oven for small baking. And I can experiment with baking just 1 cup. No need to bake big cakes and bread .
