Garlic Bread with Dry Peas curry

If we wait for perfect time to be happy, it’s never gonna happen . Isn’t it ? Mine happens with food. I many times miss something in my meal plan. Thought will make white bean soup but forgot to soak and then was so busy with work meetings until lunch time . Oh well, I had Indian dry peas curry which is like soup.

Made garlic butter at home . Use grass fed cow butter of good quality and mixed some fresh chopped garlic, Italian seasoning. Spread on bread , add some mozzarella cheese and bake , broil.

Top with some red chili flakes . 15 minute and lunch was ready.

Tofu Tikka

Paneer Tikka is a popular appetizer in Indian restaurant but you can use Tofu too . Use extra firm tofu. I had firm tofu and so you can see how it disintegrated.

Basically vegetables are marinated in yogurt sauce. We add some roasted chickpea flour but if you use greek yogurt it’s thick enough . Or you can use any flour you generally use to thicken your soup or sauce here.

Now add spices like red pepper, turmeric , cumin powder etc . Your choice, likes snd creativity into plain yogurt. If you have kasoori methi and mustard oil add that for Indian flavor. Or little olive is good too. We are flexible , right ?

Marinate vegetables like colored pepper , tofu, onion , mushrooms.

Put it on skewers and bake in oven for 30 -40 minutes turning them around few times in between . You can pour little butter when you turn it around .

This is no way authentic tikka recipe that you find in restaurants but at home for fun, healthy meal.

With little salad on side and cilantro chutney makes a good meal.

Appetizer for dinner . Why not ? Our minds are so conditioned that we get stuck on right and wrong and forget to be just happy.

Cauliflower Rice Paratha

Cauliflower rice has become very popular now a days and cauliflower Paratha has been loved by Indians for so long. It involves shredding cauliflower but now this cauliflower rice is perfect for Paratha too. When you don’t have cauliflower or less time or let’s be honest lazy like me then this is very handy.

If you never heard of cauliflower Paratha but would like to use cauliflower rice, have something for you too.

Cook cauliflower rice according to pkg instructions and make sure it’s dry and no water left .

Add spices like turmeric, chilli , roasted cumin powder , ginger garlic powder or curry powder and salt . You can add some chopped cilantro. Gives a nice flavor.

Take tortillas you like , wheat or white , Keto whatever . Make like quesadilla filling this spicy cauliflower mixture . You can add cheese too if you like . Use ghee if you have for paratha flavor or butter. Be creative.

We eat with plain yogurt on the side.

Coconut Water With Meat

If you keep eyes, ears open you find treasures. Today while driving saw Mexican kind of farmer market and so I stopped.

Saw a guy with fresh green coconuts and he was removing meat and giving it too . Was all clean and he had process set up very well. Bought 1 and it was only $5. Water was very good and so much meat . I froze some and will use in coconut chutney.

I do stop by road side market or fresh vegetables, fruits stand whenever possible. Have found many good extra ordinary produce over the years.
