Ridge gourd Peel Chutney

Ridge gourd is rich in enzyme catalyse so here’s few way of using it . Ridge gourd dal is easy to make in instant pot. I used Masoor dal but you can use any dal. You can also use yellow split pea. But if you are at Indian store trying to buy ridge gourd then might as well buy dal.

Ridge gourd peel yes peel also is edible. Generally ppl seem to remove some hard peel and then make curry out of it separately or make chutney. So I made chutney . And used it as a spread on sandwich .

Chutneys are good to eat in stead of all those sugar, salt rich sauces , ketchup.


Catalyze Experiment

Research says grey hair is due to build up of h2o2. And Enzyme catalyze breaks down h2o2. As we age of course body produces less enzyme . But there are some fruits , vegetables rich in catalyze. And it’s an easy to experiment with and find out if it’s really rich in catalyze.

Buy H2O2 from drug store and take a little in glass bowl or if you have test tube and throw a piece of vegetable. Wait for 5 minute and if bubbles show up then it has catalyze. All good so far.

This Indian vegetable called Turai also known as ridge gourd is advertised for grey hair. And so I wanted to test if it’s rich in catalyze .

Experimented with onion, broccolis, cilantro, pineapple and last ridge gourd . Guess what ? Ridge gourd made bubbles so fast and most .

After heating and cooking though, I don’t know how much enzyme it will still have. I was just curious to know if it actually had any catalyze and so did this little experiment. For now, I will just keep enjoying Turai as vegetable. Next I will share few dishes with Turai.

Quinoa Oat Uttapam

Indian kind of pancake. Taste good . Soak quinoa , steel cut oat and 1 tsp of yellow split peas or lentil. Indian ppl can add Chana dal and urad dal. This will give a good flavour . Quinoa and oat can be half half cup or adjust whatever you have , like. Soak for 2 -3 hrs.

Blend it with little water and keep consistency like pancake batter. Not too thick and not too thin.

Add finely chopped red onion, cilantro, salt. You can also also add grated carrot , chopped green chili.

Use olive oil to coat skillet and drop few drops around as it cooks .

Try it out if it appeals to you.


Cajun Spice Boiled Peanuts

Made Cajun spice mix at home . It’s very easy. Blend of spices and you can make as much spicy as you want . Peanuts are high in Protein and it’s fun to peel and eat them . Keeps you full for a long time .

I use dry raw peanuts and cook in instant pot . First I cook just with water for 45 minutes and then add spices . Cook again for 15 minutes and let it cool down naturally. Let peanuts absorb all spices, salt.
