Healthy tomato soup

  • What is healthy? Definition of healthy changes from person to person, isn’t it? For me, fresh simple food is healthy.
  • With the holiday season here, we all will indulge. So will be good to eat something simple in between. This tomato soup is very easy to make and low on calories.
  • Boil tomatoes with water until you can slip off tomato skin.
  • Blend de skinned tomatoes in blender with little ginger root piece depending on how much ginger flavour you want. Or for 3 medium tomatoes, i would add 1 tsp of ginger paste or shredded ginger. Fresh ginger root is good.
  • Heat any corn, canola, peanut oil you have. I am not sure how olive oil will taste here.  Use as little as possible like 1 tsp probably. Add a tsp of cumin seeds and when they turn little brown, add your tomato mixture.
  • Add water depending on how thin you want. But do add more water. You don’t want it thick.
  • Add little turmeric powder, red chili powder and salt. Let it boil for sometime.
  • At last, add pinch of sugar and chopped cilantro leaves.
  • Soup is really tasty and filling. Do give it a shot.
