Cranberry jalapeno loaf

IMG_1248

  • Continuing our cranberry experiments, today i made cranberry jalapeno loaf. This idea had been on my mind for few years and finally it was implemented today.
  • And a successful experiment. Not only it looks very festive, but it has all different flavours. Hot, spicy, sweet, tangy…a perfect package. 🙂
  • As i don’t measure things, i would give rough idea.
  • 2 cup all-purpose flour, 2 tsp baking soda, 1 tsp baking powder, 1 tsp salt, 3/4th cup mix of brown and white sugar.  Mix all dry ingredients.
  • Add 1/4 th to 1/2 cup fresh cranberries, 1 chopped jalapeno or depending on your liking and i also threw some dry cranberries. May be 2 tbsp.
  • Add 1 cup mix of yogurt and milk, 1/2 cup oil or butter to dry ingredients.
  • Bake it in loaf pan at 350 F for 45-50 mins.
  • Sending it to Srivalli’s cake mela here : http://cooking4allseasons.blogspot.com/2013/11/announcing-cakes-mela-with-giveaways.html
  • There are plenty of wonderful cake recipes there, do check it out and try something new this season.
  • Happy Holidays !
