Healthy tomato soup


  • What is healthy? Definition of healthy changes from person to person, isn’t it? For me, fresh simple food is healthy.
  • With the holiday season here, we all will indulge. So will be good to eat something simple in between. This tomato soup is very easy to make and low on calories.
  • Boil tomatoes with water until you can slip off tomato skin.
  • Blend de skinned tomatoes in blender with little ginger root piece depending on how much ginger flavour you want. Or for 3 medium tomatoes, i would add 1 tsp of ginger paste or shredded ginger. Fresh ginger root is good.
  • Heat any corn, canola, peanut oil you have. I am not sure how olive oil will taste here.  Use as little as possible like 1 tsp probably. Add a tsp of cumin seeds and when they turn little brown, add your tomato mixture.
  • Add water depending on how thin you want. But do add more water. You don’t want it thick.
  • Add little turmeric powder, red chili powder and salt. Let it boil for sometime.
  • At last, add pinch of sugar and chopped cilantro leaves.
  • Soup is really tasty and filling. Do give it a shot.

Cranberry jalapeno loaf


  • Continuing our cranberry experiments, today i made cranberry jalapeno loaf. This idea had been on my mind for few years and finally it was implemented today.
  • And a successful experiment. Not only it looks very festive, but it has all different flavours. Hot, spicy, sweet, tangy…a perfect package. 🙂
  • As i don’t measure things, i would give rough idea.
  • 2 cup all-purpose flour, 2 tsp baking soda, 1 tsp baking powder, 1 tsp salt, 3/4th cup mix of brown and white sugar.  Mix all dry ingredients.
  • Add 1/4 th to 1/2 cup fresh cranberries, 1 chopped jalapeno or depending on your liking and i also threw some dry cranberries. May be 2 tbsp.
  • Add 1 cup mix of yogurt and milk, 1/2 cup oil or butter to dry ingredients.
  • Bake it in loaf pan at 350 F for 45-50 mins.

Cranberry potato curry


  • Everyone loves potato curry, right? Why not combine it with cranberry and kill 2 birds with 1 shot?
  • If you missed why cranberries, check  “Cranberry dal and kidney” post.
  • I generally make potato curry with tomatoes so  replaced tomatoes with cranberries and magic happened. It was really tasty.
  • Here’s general guideline: Fry some onion until golden brown. Add ginger-garlic paste and all dry spices, salt.
  • Add chopped potatoes and water. Now throw some cranberries in it. Cook until potatoes are done.
  • Tada…it’s done. Simple, isn’t it? Tasty, seasonal , healthy etc etc. Oh and cheap too. Potatoes 5 lb for $2 and cranberries are on sale everywhere. Unless you are in india, onions are very cheap too.
  • I had with jowar(sorghum) roti and it was a perfect gujju meal.

Cranberry dal


  • Cranberries are kidney cleansing and are recommended often to treat UTI. There’s a lot of research done for it. Google for more info. There are so many sites stating it’s benefits, how it’s powerhouse of anti oxidants and what not.
  • And it’s everywhere this time of the year. How can you ignore it?
  • Most of the recipes or cranberry items i have seen are loaded with sugar or use dried cranberries which is probably sugar-coated too.
  • Cranberry is naturally tart so why not use in recipes where you need tart or sour flavour?
  • I use in my dal and  love it. Here’s what i do: Pressure cook tuvar dal with fresh cranberries. For 1 cup dal, i use 1/4th cup fresh cranberries. If you like more sour, add more cranberries.
  • Season oil with mustard seeds, hing and few methi seeds. Add cooked mashed dal, turmeric powder, red chilli powder and salt.
  • Boil and finally garnish with cilantro.
  • Why wait for health problems to enjoy cranberries?
  • Come up with your own way to enjoy fresh cranberries or make this Dal.

A century with butternut squash cutlet


  • First of all, “justlunchideas” is making a century with this post. Isn’t that amazing? Thank you all for all encouragement and my teacher Pradip who always inspires me, shares his ideas and knowledge freely.
  •  I hope everyone who makes a visit here, is finding something useful ,entertaining and a new insight. I am def enjoying sharing my experiments.
  • Back to food…It’s still fall and gotta continue all winter squash experiments. Today i made cutlet with butternut squash and it turned out pretty good.
  • Pressure cook, roast , steam or however you want to cook your butternut squash. Remember “Fresh” .Mash it. No need to add potatoes.
  • Everyone knows how to make cutlet so just add your spices, steamed veggies like peas, corn, green beans, flour, bread etc etc. and pan fry cutlet.
  • Enjoy with ketchup !
