- If you are looking for iron rich food, this will be 1 of good meal. Dry black eye peas are easy to cook and has iron. No need to soak them. Just pressure cook them and add giner-garlic paste, turmeric, red chilli powder, coriandor-cumin powder and salt. Do a seasoning with just a little bit of mustard seeds and hing. And your curry is ready.
- Paratha you see in the picture is spinach paratha. Spinach is a good source of iron as we all know.Cook fresh spinach for few mins until wilted. Puree it with green chillie. For dough, I used 1/2 part whole wheat flour,1/4th besan and 1/4th millet flour. Add a spoon of yogurt, spinach puree and a spoon of sesame seeds. Add other spices, salt according to your taste.Now make dough as usual and cook. Millet is also a good source of iron too.
- Don’t forget lemon and tomato, onion salad. Our body needs vitamin c to absorb iron hence lemon to squeeze on curry and salad.
